The Pizza Bible, by Tony Gemignani.

Kindle edition on sale for $1.99.  Normally $17.59 in hardcover.  $1.99 is a great price for an ebook of this quality. Professional (not DIY) Kindle ebooks usually go for $9.99.  This is likely a temporary price; expect it to go up.

I’ve been on a pizza kick recently, downloading free cookbooks from Amazon.  Most free recipe ebooks on Amazon are junk, poorly written or poorly translated, and filled with errors. They start out as free so the author can use fake accounts or friends to download/”purchase” and then write reviews with high ratings, and then the author raises the price and scams unsuspecting buyers.

Beware ebooks written in English that have glowing reviews by users who sound like English is not their native language.

This cookbook has dough and sauce recipes for most of the major genres of pizza, including Chicago, Detroit, deep-dish, New York, thin crust, and Neapolitan.

The author is a multi-year champion pizza chef.

Even if you don’t use his exact ingredients, and make close-enough substitutions with what is locally available, the concepts and procedures are valid.

I admit I haven’t followed these recipes exactly, but even “close enough” gives great results.  Using a starter, diastatic malt extract/sugar, long rise times, pizza stones are the hallmarks of gourmet pizza.
